Ingredients 

Crepes

  • 3 eggs
  • 1 ¼ cups milk
  • ¾ cup flour
  • ¼ tsp salt
  • 1 tbsp sugar
  • 2 tbsp melted butter

Apple Filling

  • 4 red delicious apples
  • 4 royal gala apples
  • ¼ cup butter
  • 1 cup brown sugar
  • 1 tsp cinnamon
  • Grated nutmeg as desired – whole nutmeg preferred, can use powder

Custard Filling

  • I can of Devon Custard (400 g)

Topping

  • Ingredients – Topping
    Whipped cream, icing sugar and cinnamon

Step by Step Instructions

Prepare

Beat crepe ingredients with an electric mixer. Chill one hour or overnight. Peel and core apple into slices.

Cook

In a crepe pan, pour crepe mixture into the pan. Tilt the pan until the pan has a thin layer evenly distributed on the bottom (approximately ¼ cup of crepe mixture). Cook until the sides of the crepe are browned. Loosen with a spatula, flip and brown on other side. On medium low heat, cook apples, butter, brown sugar, cinnamon and nutmeg in a covered saucepan. Simmer until apples are fork-tender. Approximately 15 minutes.

 

Finish

Lay the crepe flat on a serving dish. Spoon a straight layer of Devon Custard down the middle of the crepe. Spoon cooked apples over the Devon Custard. Wrap each end of the crepe over the apples – creating a horizontal log. Top crepe with whipped cream. Pour a scoop of apple liquid (from the cooked apples) over top. Dust with icing sugar and sprinkle with cinnamon.
