Chicken Parmesan Ingredients

  • 2 pounds skinless boneless chicken (approximately 5 chicken breasts)
  • 1 cup flour
  • 1 tbsp garlic powder
  • 1 tsp salt
  • ½ tsp pepper
  • 2 cups Italian bread crumbs
  • 2 eggs
  • 1 cup water
  • 1 can (796 ml) crushed tomatoes
  • 2 cups grated old white cheddar cheese
  • 2 cups grated mozzarella cheese
  • ¼ cup grated parmesan cheese
  • 3 cups vegetable oil
  • 1 large zip lock freezer bag

Chicken Parmesan Step by Step Instructions

Prepare

Slice chicken breast horizontally into two pieces. In a freezer bag, add chicken, flour and spices (salt, pepper and garlic powder). Seal bag and coat chicken in flour mixture. Beat egg and water. Dip each piece of chicken in egg mixture. Drudge chicken in crumbs until evenly coated. Set aside. Combine cheeses (old white cheddar, mozzarella and parmesan) and set aside. Heat crushed tomatoes in a covered saucepan.

Cook

In a 12 inch skillet, heat vegetable oil on medium heat. Fry several pieces of chicken at once for 3 to 4 minutes on each side. Set aside. Place several pieces of cooked chicken on a baking sheet. Top each chicken piece with tomato sauce and cheese. Broil until cheese is melted and golden brown. Serve with Caesar Salad and Garlic Bread.

Caesar Salad Ingredients

Salad

  • 2 Romaine Hearts
  • 2 tbsp grated parmesan cheese
  • 8-10 bacon strips (cooked and crumbled)
  • 1 cup croutons

Dressing

  • 1 cup olive oil
  • 2 eggs
  • ¼ cup malt vinegar
  • 1 tbsp Worchester sauce
  • 2 tbsp lemon juice
  • ½ tsp salt
  • ½ tsp pepper
  • ¼ tsp garlic powder
  • ½ tsp garlic puree
  • 1 tsp dry mustard
  • 1 tbsp chopped parsley

Caesar Salad Step by Step Instructions

Prepare

Wash, dry and cut romaine lettuce into bite-size pieces. Cook and crumble bacon strips. Set aside. In a large bowl add lettuce, parmesan cheese, bacon. Set aside. Prepare Caesar salad dressing by mixing all ingredients in a mixing bowl or shake in a jar. Pour desired amount of dressing over salad mixture and toss until all pieces are evenly coated. Fold in croutons and serve immediately.
